| Ingredients: ? pound Mahi Mahi Fillet ? pound large Shrimp, uncooked salt and pepper 1 Tbsp water 1 Tbsp canola oil ? tsp garlic, chopped 1 tsp shallots, chopped ? cup mushrooms, sliced 1 Tbsp pickled ginger, chopped 3 Tbsp green onions, sliced ? cup rice wine vinegar ? cup chicken stock 1 Tbsp butter ? roasted red pepper, cut into strips ? tsp turmeric Directions: 1. Season Mahi Mahi with salt and pepper and roast in the oven at 450? F for 8?10 minutes with 1 Tbsp of water. 2. In a heated saut? pan, add the canola oil and heat for 15 seconds. 3. Add garlic, shallots, mushrooms, pickled ginger, green onions and shrimp. 4. Cook until shrimp are pink. 5. Add rice wine vinegar to deglaze the pan. 6. Add chicken stock and simmer for 1 minute. 7. Finally, add the butter, red peppers and turmeric and blend well to make a sauce. 8. Pour the sauce over the roasted Mahi Mahi and serve |

| -------------------------------------------------------------------------------- INGREDIENTS: 5 pounds skinned, deboned mahi mahi, cut into chunks 3/4 (4.5 ounce) jar bottled minced garlic 1/2 cup butter, diced 1 large onion, diced 1 1/2 lemons, juiced 1/2 cup dry white wine 1 1/2 (10 ounce) cans diced tomatoes with green chile peppers salt and pepper to taste 8 ounces shredded pepperjack cheese -------------------------------------------------------------------------------- DIRECTIONS: Preheat grill for high heat. Place mahi mahi in an aluminum foil pan, and toss with the garlic to coat. Distribute butter evenly throughout pan. Spread onions over fish. Pour the lemon juice, wine, and diced tomatoes with green chile peppers over the fish. Season with salt and pepper. Tightly cover pan with aluminum foil. Place pan on the grill grate, and cook fish 35 minutes, or until easily flaked with a fork. Sprinkle with cheese before serving. |

| Brad, i grill them with the skin on (skin side down), with some cajun spice or other spice of your liking, then just eat it off the skin after. 8) |
