Have you given any thought to a thru-hull or shoot-thru-hull transducer?
Especially if you're going to be taking it with you and shoot thru may be the way to go. Another thought is most transom mounts are designed to tip up if they hit something. you may be able to tip up the one not in use if you have two on the transom.... just thinking out loud here.
