Smile takin a shark home

ok so lets say you land a nice thresher or mako over 200 lbs and want to take it home. Do most people just cut it up in their boat since most marinas don't want 50 lbs of guts and a large carcass and don't have a big enough fillet table? On another topic what about weighing it in at a local dock with no tournament going on? I'm trying to figure out local docks that have this feature, I know capt. johns and snug harbor have it, I'm docked in the pawcatuck river.
