Sharks are under NMFS rules and must be kept whole while at sea. They CAN be gutted, but must be otherwise whole.

I clean sharks right on the dock or on the boat. They are the easiest and most enjoyable fish to clean, as there are no "racks" to contend with. Cut off the tail & fins, then cut into steaks perpendicular to the body, right thru the spine. No waste. When you get to the head, you can get some nice hunks of meat out of the top of the head to a point as well.

Chuck the remains over, there's less waste than an average Tog trip
