| Jason's Spicy Fish Chowder 1. Saute onions in (50/50) butter/olive oil until soft. (2 Large) 2. Add/Saute one inch cubes of cod or striped bass until done (2 pounds) 3. Add 16 ounce can of diced, seasoned (basil) tomatoes-bring to simmer 4. Add 10 ounces of half and half (or 12 oz. whole milk)-heat to just below simmer 5. Add salt, pepper and Tobasco to taste (do not use any other hot sauce!!) Tobasco: 3-5 dashes=mild 5-10 dashes=medium 10-15 dashes=hot Serves 8-10 |

| Of course it will work with almost anything (I've tried tog, bluefish, bass, cod, swordfish and some combos like salmon and cod or scallop and bass. However flounder gets a "texture issue" (too grainy) and you generally want the fish to break up a bit like cod and tog will. Some people like potatoes in their chowder but I call that "filler" and won't do it. You can also try adding one tablespoon of sugar if your tomatoes are too acidic............JC |
