Jason's Coconut Curry Striped Bass

A.Make rice

1.Trim away any dark meat and pinbones from striped bass.

2.Cut in 1-1.5 inch cubes.

3.Over medium flame, heat one can of coconut milk and one can of whole milk (if the coconut milk is "un-sweetened", add one heaping tablespoon of sugar).

4.Add: one heaping tablespoon of yellow curry powder, one package (10-12 oz.)of frozen sweet peas or one package frozen green beans.

When above comes to a slow/quiet simmer....

5.Add striped bass, stir, time 5-7 minutes and serve over rice.

NOTE:There can be literally 100's of variations according to ones personal taste. One of my customers stirs in slivered, toasted almonds and golden raisens just before serving. ENJOY!..........JC

One of my customers substitutes golden raisins and chopped almonds for the green stuff (stir them in just before serving-like 10 seconds before so the nuts stay crunchy)............JC
