1 1/2 - 2 lbs dolphin filets ( or any firm white fish) 1 lemon salt & fresh ground pepper TOPPING: 1/2 stick softened (not melted) butter 2 tbs mayonaise 2 - 3 chopped scallions 1 - 2 tsp coarse ground black pepper ( to your taste !) 1 - 2 tbs hot sauce Place filets on broiler pan, squeeze lemon juice over all & season with salt & pepper, let stand for 5 - 10 minutes. Combine all topping ingredients in a bowl. Broil fish for 8-10 minutes , until almost done. open oven & coat top of filets with topping mixture & continue to broil 4-6 more minutes , until fish is cooked & topping has browned. CHOW TIME ! | ||
