| The fish wholesalers are getting more and more of them in late summer and early fall. They are not paying much for them, so every time I catch some they end up on my table. The skin is like shoe leather but the meat is quite tasty. They are really not that hard to fillet and definitely worth the trouble. Sometimes you can even lift up their dorsal fin and it will lock into the upright position. Then you push the base of the dorsal fin and it unlocks and goes down. Sometimes this works for me and sometimes not but I suspect this is how it got its name. |
